Preparation

1.Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

2.In a large pot, heat some oil over medium heat. Add the chopped onions and cook until golden brown.

3.Add the minced garlic and grated ginger to the pot and cook for another minute.

4.Add the meat to the pot and cook until browned on all sides.

5.Stir in the cumin powder, coriander powder, turmeric powder, cinnamon stick, cardamom pods, and cloves. Cook for a minute to toast the spices.

6.Add the drained rice to the pot and stir well to coat the rice with the spices.

7.Pour in the chicken or beef broth and season with salt. Bring the mixture to a boil.

8.Reduce the heat to low, cover the pot, and let the rice simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.

9.Remove the pot from the heat and let it sit, covered, for 5 minutes.

10.Fluff the rice with a fork and remove the cinnamon stick, cardamom pods, and cloves.

11.Garnish the Hazaragi Chitt with fresh cilantro and serve hot with yogurt or pickles on the side.
