Ingredients
In this Filipino-American adaptation of Chorba frik, we incorporate elements of Filipino-American cuisine to create a unique flavor profile. The original Algerian dish is traditionally made with lamb or beef, but we substitute it with chicken to cater to the Filipino-American preference for poultry. Additionally, we infuse the soup with Filipino-American spices and aromatics such as garlic, ginger, and fish sauce, which add a distinct flavor to the dish. Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.

2.Add the minced garlic and grated ginger to the pot and sauté for another minute until fragrant.

3.Add the chicken pieces to the pot and cook until browned on all sides.

4.Stir in the ground cumin, ground coriander, paprika, turmeric, and cayenne pepper (if using). Cook for a minute to toast the spices.

5.Pour in the chicken broth and water, followed by the diced tomatoes and fish sauce. Bring the mixture to a boil.

6.Reduce the heat to low and add the frik to the pot. Simmer for about 30 minutes or until the frik is tender and the flavors have melded together.

7.Season with salt and pepper to taste.
