Preparation

1.In a large pot, heat the vegetable oil over medium heat. Add the diced onion, minced garlic, and minced scotch bonnet peppers. Sauté until the onions are translucent and fragrant.

2.Add the beef stew meat to the pot and brown it on all sides.

3.Stir in the ground allspice, ground thyme, paprika, and brown sugar. Cook for another minute to toast the spices.

4.Add the sliced carrots, diced potatoes, and diced bell pepper to the pot. Pour in the beef broth and coconut milk. Season with salt and pepper to taste.

5.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beef is tender and the flavors have melded together.
