Preparation

1.In a large pot, add the beef bones and cover with water. Bring to a boil and let it simmer for 10 minutes. Drain the bones and rinse them under cold water to remove any impurities.

2.In the same pot, heat some oil and sauté the chopped onion and minced garlic until fragrant and golden.

3.Add the beef bones back to the pot and pour in enough water to cover the bones. Bring to a boil, then reduce the heat and let it simmer for about 2 hours, skimming off any foam that rises to the surface.

4.Add the diced carrots, potatoes, tomato, tomato paste, cumin, coriander, turmeric, paprika, bay leaf, salt, and pepper. Stir well to combine.

5.Continue simmering the soup for another 30-40 minutes, or until the vegetables are tender and the flavors have melded together.

6.Remove the bay leaf and discard. Adjust the seasoning if needed.

7.Serve the soup hot, garnished with fresh mint leaves and parsley.
