1.In a large pot, add the beef shank, chicken thighs, chorizo sausages, carrots, potatoes, onion, garlic, chickpeas, white beans, bay leaf, and smoked paprika.

2.Fill the pot with enough water to cover all the ingredients. Season with salt and pepper.

3.Bring the pot to a boil over medium-high heat, then reduce the heat to low and let it simmer for 2 hours, or until the meats are tender and the flavors have melded together.

4.Remove the meats from the pot and set them aside. Discard the bay leaf.
