Preparation

  1. 1.
In a large pot, combine the diced quinces, water, sugar, cinnamon stick, and lemon zest.
  2. 2.
Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for about 2 hours, stirring occasionally.
  3. 3.
As the quinces cook, they will soften and release their natural pectin, thickening the mixture.
  4. 4.
Remove the cinnamon stick and continue cooking until the mixture reaches a thick, jam-like consistency, stirring frequently to prevent sticking.
  5. 5.
Once the quince paste is thick enough to hold its shape on a spoon, remove it from the heat and let it cool slightly.
  6. 6.
Transfer the mixture to a blender or food processor and blend until smooth.
  7. 7.
Pour the quince paste into a lined baking dish or individual molds and let it cool completely.
  8. 8.
Once cooled, refrigerate for at least 4 hours or overnight to allow the flavors to meld and the paste to set.
  9. 9.
To serve, cut the quince paste into squares or wedges and enjoy with cheese, crackers, or as a sweet addition to your favorite dessert.

Treat your ingredients with care...

  • Quinces — Choose ripe quinces that are fragrant and have a golden-yellow color. If they are too firm, they may require longer cooking time to soften.

Tips & Tricks

  • To test if the quince paste is ready, place a small amount on a chilled plate. If it holds its shape and doesn't spread, it is done.
  • For a spicier twist, add a pinch of ground cloves or nutmeg to the mixture.
  • Store the quince paste in an airtight container in the refrigerator for up to 2 weeks.
