Ingredients

In this Extremaduran adaptation of Čurke, we replace some of the traditional Serbian ingredients with those commonly found in Extremaduran cuisine. Instead of using Serbian sausages, we use chorizo, which adds a smoky and spicy flavor to the stew. Additionally, we incorporate Extremaduran paprika, known for its deep red color and intense flavor, to enhance the taste profile of the dish.   • 1 kg (2.2 lbs) potatoes, peeled and diced
  • 200 g (7 oz) chorizo, sliced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons Extremaduran paprika
  • 1 bay leaf
  • 1 liter (4 cups) chicken or vegetable broth
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Preparation

    In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
