1.In a medium saucepan, combine the sugar and water. Heat over medium heat, stirring constantly, until the sugar has dissolved.

2.Increase the heat to high and bring the mixture to a boil. Cook without stirring until the mixture reaches a deep amber color, about 5-7 minutes.

4.Return the saucepan to low heat and cook, stirring constantly, until the mixture thickens and reaches a temperature of 250°F (120°C) on a candy thermometer, about 15-20 minutes.
