The original dish is known for its spicy and numbing Sichuan peppercorns, but in this Peranakan version, we replace them with a combination of aromatic spices such as turmeric, coriander, and cumin. Additionally, we enhance the peanut sauce with a touch of tamarind, which adds a tangy element to the dish, characteristic of Peranakan cuisine. Preparation

1.Cook the dried egg noodles according to the package instructions. Drain and set aside.

2.In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and golden brown.

3.Add the turmeric powder, ground coriander, and ground cumin to the pan. Stir well to coat the onions and garlic with the spices.

4.Pour in the coconut milk and stir to combine with the spices. Allow the mixture to simmer gently for 5 minutes.

5.Add the ground peanuts, tamarind paste, soy sauce, and brown sugar to the pan. Stir well to incorporate all the ingredients and let the sauce simmer for another 5 minutes, until it thickens slightly.

6.Add the cooked noodles to the pan and toss them in the fragrant peanut sauce until well coated.

7.Divide the noodles into serving bowls and top with bean sprouts, sliced spring onions, and fresh cilantro.
