Treat your ingredients with care...
- Feta cheese — Use a good quality feta cheese for the best flavor and texture. If you prefer a milder taste, you can substitute it with a milder cheese like ricotta or cottage cheese.
- Spinach — Make sure to thoroughly wash the spinach leaves before chopping them. You can also use frozen spinach, but make sure to thaw and drain it well before using.
- Fresh herbs — If you don't have access to fresh herbs, you can use dried herbs instead. However, the fresh herbs add a vibrant flavor to the roti.
Tips & Tricks
- To achieve a flaky texture in the roti, make sure to roll it out thinly.
- If the roti starts to puff up while cooking, gently press it down with a spatula to ensure even cooking.
- Experiment with different herbs and spices to customize the flavor of the filling according to your preference.
- Serve the stuffed roti with a side of Greek salad for a complete Ionian Islands-inspired meal.
- Leftover roti can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a pan or microwave before serving.
