Preparation

1.In a mixing bowl, combine the lobster meat, foie gras, and truffle. Season with salt and pepper. Set aside.

3.In another bowl, combine the minced chicken, mushrooms, bamboo shoots, water chestnuts, and grated ginger. Season with salt and pepper. Set aside.

4.Blanch the spinach leaves in boiling water for 1 minute. Remove and plunge into ice water to cool. Drain and set aside.

5.In a large mixing bowl, combine the rice flour, wheat starch, tapioca starch, chicken stock, cream, and truffle oil. Stir until well combined and smooth.

6.Grease a steamer basket with oil. Pour a thin layer of the batter into the steamer and steam for 2 minutes until set. Repeat until all the batter is used.

7.Assemble the dim sum by placing a spoonful of the lobster mixture onto one steamed wrapper, fold into a parcel, and secure with a toothpick. Repeat with the shrimp mixture and chicken mixture.
