Preparation

1.Heat vegetable oil in a wok or large skillet over medium-high heat.

2.Add minced garlic and grated ginger, and stir-fry for 1 minute until fragrant.

3.Add shrimp and cook until pink and cooked through, approximately 2-3 minutes. Remove shrimp from the pan and set aside.

4.In the same pan, add mixed vegetables and stir-fry for 2-3 minutes until slightly tender.

5.Push the vegetables to one side of the pan and add the cooked rice to the other side. Break up any clumps of rice with a spatula.

6.Drizzle soy sauce and oyster sauce over the rice and vegetables. Stir-fry for 2-3 minutes, combining everything evenly.

7.Return the cooked shrimp to the pan and mix well with the rice and vegetables.

8.Season with salt and pepper to taste. Drizzle sesame oil over the dish and stir to combine.
