Preparation

1.Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

2.In a small bowl, soak the saffron threads in 2 tablespoons of warm water for 10 minutes.

3.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

4.Add the soaked and drained rice to the pot and stir well to coat the grains with the onion and garlic mixture.

5.Pour in the saffron water and 4 cups of water. Season with salt to taste. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

6.While the rice is cooking, prepare the spiced beans. In a separate pan, heat a tablespoon of vegetable oil over medium heat. Add the ground cumin, ground coriander, ground turmeric, and ground cinnamon. Stir for a minute until fragrant.

7.Add the drained and rinsed kidney beans to the pan and mix well to coat them with the spices. Cook for 5-7 minutes, stirring occasionally, until the beans are heated through.

8.Serve the saffron-infused rice alongside the spiced beans. Garnish with fresh cilantro.
