1.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

3.Stir in the ground cumin, ground coriander, ground cinnamon, turmeric, and cayenne pepper (if using). Cook for an additional minute to toast the spices.

4.Add the diced carrots, potatoes, and bell pepper to the pot. Stir well to coat the vegetables with the spices.

5.In a separate bowl, whisk together the tomato paste, peanut butter, and beef or vegetable broth until smooth. Pour the mixture into the pot, stirring to combine.

6.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 1 hour, or until the meat is tender and the flavors have melded together.
