1.Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.

2.In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.

3.Add the ground peanuts, cumin, coriander, paprika, and chili powder (if using) to the pot. Stir well to combine the spices with the peanuts and onions.

4.Return the chicken to the pot and add the diced tomatoes and bell pepper. Pour in the chicken broth and water. Season with salt and pepper to taste.

5.Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 45 minutes to 1 hour, or until the chicken is tender and the flavors have melded together.
