Ingredients

In this Zimbabwean adaptation, we have replaced the Thai flavors of Mu daet diao with traditional Zimbabwean spices such as paprika, cayenne pepper, and ground coriander. Additionally, we have incorporated peanut butter into the stew to add a unique nutty flavor that is commonly found in Zimbabwean cuisine. Preparation

    Heat the vegetable oil in a large pot over medium heat.

    Add the chopped onion and minced garlic to the pot and sauté until the onion is translucent.

    Add the beef cubes to the pot and brown them on all sides.

    Stir in the diced tomatoes, peanut butter, paprika, cayenne pepper, ground coriander, salt, and black pepper. Cook for 2-3 minutes to allow the flavors to meld together.

    Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beef is tender.
