While the original Dovi recipe from Zimbabwe features groundnuts as the main ingredient, this adapted Caribbean Peanut Stew incorporates the flavors and spices commonly found in Curaçaoan cuisine. The addition of Caribbean spices like cumin, coriander, and allspice, as well as the use of lime juice and cilantro, gives this dish a distinct Caribbean twist, setting it apart from the traditional Dovi. Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they turn golden brown.

2.Stir in the cumin powder, coriander powder, allspice, paprika, and minced scotch bonnet pepper. Cook for another minute to release the flavors.

3.Add the chicken (or vegetables) to the pot and cook until browned on all sides.

4.Reduce the heat to low and add the peanut butter, stirring until it melts and coats the chicken (or vegetables) evenly.

5.Pour in the chicken or vegetable broth and coconut milk, stirring well to combine. Bring the stew to a gentle simmer.

6.Cover the pot and let the stew simmer for about 30 minutes, or until the chicken is cooked through and tender (or vegetables are cooked to desired tenderness).
