Ingredients
The traditional English muffin is replaced with a toasted slice of simit, a Turkish sesame bread. The Canadian bacon is substituted with sucuk, a spicy Turkish sausage. Preparation

1.In a small saucepan, melt the butter over low heat.

2.In a separate saucepan, bring water to a boil and add the white vinegar.

3.Crack the eggs into the boiling water and poach for 3-4 minutes.

5.To make the hollandaise sauce, whisk together the egg yolks, lemon juice, red pepper flakes, garlic, salt, and pepper in a heatproof bowl.

6.Place the bowl over a pot of simmering water and whisk continuously until the mixture thickens.

8.To assemble, place a slice of toasted simit on a plate, top with a slice of sucuk, a poached egg, and a generous spoonful of hollandaise sauce.
