Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the lamb cubes and cook until browned on all sides. Remove the lamb from the pot and set aside.

2.In the same pot, add the diced onion and sauté until translucent.

3.Add the carrots, parsnips, potatoes, turnips, and celery to the pot. Stir and cook for a few minutes until slightly softened.

4.Return the lamb to the pot and pour in the lamb or vegetable broth. Add the bay leaf, dried thyme, dried rosemary, and dried Icelandic moss.

5.Season with salt and pepper to taste. Bring the stew to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together.
