Preparation

1.In a large pot, bring salted water to a boil. Add the diced potatoes and carrots, and cook until tender. Drain and set aside.

2.In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.

3.Add the cooked potatoes, carrots, and frozen peas to the pan with the onions. Stir well to combine.

4.Reduce the heat to low and add the Skyr to the pan. Stir gently until the Skyr is fully incorporated and coats the vegetables.

5.Season with salt and pepper to taste. Cook for an additional 5 minutes, allowing the flavors to meld together.
