Ingredients
In this adaptation, we have replaced the traditional cow's milk with creamy coconut milk to infuse the dessert with a tropical flavor. Preparation

1.Rinse the Arborio rice under cold water until the water runs clear.

2.In a medium-sized saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt.

3.Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 30-35 minutes, stirring occasionally, until the rice is cooked and the mixture has thickened.

4.Remove the saucepan from the heat and stir in the vanilla extract.

5.Let the pudding cool for a few minutes, then transfer it to individual serving bowls or glasses.

6.Refrigerate the pudding for at least 2 hours, or until chilled and set.
