Preparation

  1. 1.
In a large mixing bowl, combine the flour and salt. Gradually add the warm water while kneading until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
  2. 2.
In a skillet, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  3. 3.
Add the chopped spinach to the skillet and cook until wilted. Sprinkle with nutmeg, salt, and pepper, and stir well.
  4. 4.
Remove the skillet from heat and let the spinach mixture cool slightly. Once cooled, stir in the crumbled feta cheese.
  5. 5.
Preheat the oven to 180°C (350°F).
  6. 6.
Divide the dough into small balls and roll each ball into a thin circle.
  7. 7.
Place a spoonful of the spinach and feta mixture onto one half of the dough circle, leaving a small border around the edges.
  8. 8.
Fold the other half of the dough over the filling and press the edges firmly to seal. You can use a fork to create a decorative pattern.
  9. 9.
Brush the top of each Gomleze with beaten egg wash.
  10. 10.
Place the Gomleze on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
  11. 11.
Remove from the oven and let them cool for a few minutes before serving.

Treat your ingredients with care...

  • Spinach — Make sure to thoroughly wash the spinach leaves and remove any tough stems before chopping.
  • Feta cheese — Opt for high-quality feta cheese for the best flavor. If you prefer a milder taste, you can soak the feta cheese in water for 30 minutes before crumbling it.

Tips & Tricks

  • For a more indulgent version, you can add a sprinkle of grated Parmesan cheese on top of the Gomleze before baking.
  • Experiment with different fillings such as mushrooms, roasted red peppers, or even ground meat for a variation of flavors.
  • Serve the Gomleze warm with a side of tzatziki sauce or a fresh salad for a complete meal.
  • If you're short on time, you can use store-bought puff pastry instead of making the dough from scratch.
  • Leftover Gomleze can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.

Serving advice

Serve the Gomleze as an appetizer or a main course. Cut each Gomleze into smaller pieces for a party or serve them whole for a more substantial meal. Garnish with a sprinkle of fresh herbs, such as parsley or dill, for an added touch of freshness.

Presentation advice

Arrange the Gomleze on a platter, allowing the golden brown crust to be visible. You can also sprinkle some sesame seeds or nigella seeds on top of the Gomleze before baking for an attractive presentation. Serve with a side of tzatziki sauce or a dollop of Greek yogurt for dipping.
