Preparation

1.Preheat the oven to 350°F (180°C).

2.In a small saucepan, combine 1 cup of sugar and water. Cook over medium heat, stirring occasionally, until the sugar dissolves and turns golden brown. Pour the caramel into a 9-inch (23cm) round baking dish, swirling to coat the bottom evenly.

3.In a mixing bowl, whisk together the eggs, coconut milk, whole milk, 1/2 cup of sugar, vanilla extract, and salt until well combined.

4.Pour the custard mixture over the caramel in the baking dish.

5.Place the baking dish in a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the baking dish.

6.Carefully transfer the roasting pan to the preheated oven and bake for 50-60 minutes, or until the custard is set but still slightly jiggly in the center.

7.Remove the baking dish from the water bath and let it cool to room temperature. Then, refrigerate for at least 4 hours or overnight.

8.To serve, run a knife around the edges of the dish to loosen the flan. Invert a serving plate over the dish and carefully flip it over to release the flan. The caramel sauce will flow over the custard, creating a beautiful presentation.
