Preparation

1.Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture. Squeeze the zucchini to remove as much liquid as possible.

2.In a large bowl, combine the grated zucchini, chopped onion, minced garlic, parsley, dill, paprika, thyme, savory, salt, and black pepper. Mix well.

3.Add the flour and beaten eggs to the zucchini mixture. Stir until all the ingredients are well combined and the mixture has a thick consistency.

4.Heat vegetable oil in a frying pan over medium heat.

5.Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon. Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.
