Preparation

1.In a large bowl, combine the chicken, achiote paste, cumin, dried oregano, minced garlic, and chopped onion. Mix well to coat the chicken evenly with the spices.

2.Heat vegetable oil in a large pot over medium heat. Add the marinated chicken and cook until browned on all sides.

3.Add the diced tomatoes and chicken broth to the pot. Bring to a simmer and let it cook for 15 minutes.

4.Add the sliced plantains and yuca to the pot. Cook for an additional 20 minutes or until the chicken is cooked through and the plantains and yuca are tender.

5.Stir in the chopped cilantro and season with salt and pepper to taste.
