1.Rinse the mung beans under cold water and drain.

2.In a large pot, bring the water to a boil. Add the mung beans and cook for 30 minutes or until tender. Drain and set aside.

3.In the same pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until fragrant.

4.Add the shrimp and cook until they turn pink and opaque.

5.Stir in the cooked mung beans, spinach, tomato, and fish sauce. Cook for an additional 5 minutes or until the spinach wilts.
