1.Rinse the mung beans under cold water and soak them in water for at least 2 hours. Drain and set aside.

2.In a large pot, cook the Canadian bacon over medium heat until crispy. Remove the bacon from the pot and set aside.

3.In the same pot, sauté the onion, carrots, celery, and garlic until they are softened.
