Ingredients
In this Samoan adaptation of Gỏi bò, we incorporate traditional Samoan flavors and ingredients to give the dish a unique twist. The original Vietnamese dish typically uses fish sauce, lime juice, and Vietnamese herbs for the dressing, while our Samoan version incorporates coconut milk and Samoan chili peppers for a tropical kick. Preparation

1.In a bowl, combine the beef slices with the coconut milk, lime juice, Samoan chili peppers, cilantro, mint, salt, and pepper. Marinate for at least 30 minutes.

2.Preheat the grill to medium-high heat. Grill the marinated beef slices for 2-3 minutes per side, or until cooked to your desired level of doneness. Remove from the grill and let it rest for a few minutes.

3.In a large bowl, combine the cucumber, bell peppers, tomatoes, and red onion.

4.Slice the grilled beef into thin strips and add it to the bowl of vegetables.

5.In a small bowl, whisk together the lime juice, coconut milk, Samoan chili peppers, cilantro, mint, salt, and pepper to make the dressing.
