1.In a saucepan, combine the sugar and water. Heat over medium heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and let the syrup cool.

2.Once the syrup has cooled, add the freshly squeezed lemon juice and stir well to combine.

3.Pour the mixture into a shallow, freezer-safe dish and place it in the freezer.

4.Every 30 minutes, use a fork to scrape and stir the mixture, breaking up any ice crystals that form. Repeat this process for about 3-4 hours, or until the granita has a slushy texture.
