Ingredients
In this Italian version of Huevos Rancheros, we replace the traditional Mexican ingredients with Italian ones. We use tomato sauce instead of salsa, and add some Italian herbs like oregano and basil. We also use Parmesan cheese instead of cheddar, and serve the dish with Italian bread instead of tortillas. We alse have the original recipe for Huevos rancheros, so you can check it out.

Preparation

1.Preheat the oven to 180C (350F).

2.In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until softened.

3.Add the red bell pepper, oregano, basil, salt, and pepper. Cook for another 2-3 minutes until the pepper is tender.

4.Add the tomato sauce and simmer for 5 minutes until the sauce thickens.

5.Make 4 wells in the sauce and crack an egg into each well.

6.Sprinkle the Parmesan cheese over the eggs.

7.Transfer the skillet to the oven and bake for 10-12 minutes until the eggs are set.

8.Toast the Italian bread slices.

9.Serve the eggs with the bread slices.
