Ingredients

In this French adaptation of Huevos Rancheros, we use fresh goat cheese instead of queso fresco, and add a sprinkle of Herbes de Provence for a unique flavor. Preparation

    Preheat oven to 375F (190C).

    In a large skillet, heat olive oil over medium heat. Add onion, garlic, and red bell pepper. Cook until vegetables are soft, about 5 minutes.

    Add tomato sauce, chicken broth, and Herbes de Provence. Simmer for 10 minutes.

    Crack eggs into the skillet, making sure to space them out evenly. Season with salt and pepper.

    Transfer skillet to the oven and bake for 10-12 minutes, or until eggs are cooked to your liking.

    Remove skillet from oven and sprinkle crumbled goat cheese over the top.
