Treat your ingredients with care...
- Feta cheese — Use a high-quality feta cheese for the best flavor. If you don't like feta, you can substitute it with goat cheese or queso fresco.
- Black olives — Use pitted black olives for convenience. You can also substitute them with Kalamata olives or green olives.
- Tortillas — Use small corn tortillas for an authentic Mexican flavor. If you can't find corn tortillas, you can use flour tortillas instead.
Tips & Tricks
- To make the dish spicier, add some chopped jalapeno peppers or red pepper flakes to the tomato sauce.
- You can also add some chopped fresh herbs, such as cilantro or parsley, to the dish for extra flavor.
- If you don't have an oven-safe skillet, you can transfer the eggs to a baking dish before baking in the oven.
