1.In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and brown on all sides. Remove the meat from the pot and set aside.

2.In the same pot, add the diced onion, minced garlic, jalapeno peppers, and bell peppers. Sauté until the vegetables are softened.

3.Add the diced tomatoes, tomato paste, chili powder, cumin, and oregano to the pot. Stir well to combine.

4.Return the browned beef stew meat to the pot and pour in the beef broth. Season with salt and pepper to taste.

5.Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2-3 hours, or until the beef is tender and the flavors have melded together.
