Ingredients

1.In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

2.Add the diced potatoes, lentils, vegetable broth, dried oregano, and dried thyme to the pot. Bring to a boil, then reduce the heat to low and simmer for 30 minutes or until the lentils are tender.
