Preparation

  1. 1.
In a large bowl, combine the ground lamb, chopped onion, minced garlic, ground cumin, ground coriander, ground cinnamon, ground turmeric, cayenne pepper (if desired), chopped parsley, and chopped mint. Season with salt and pepper to taste. Mix well until all the ingredients are evenly incorporated.
  2. 2.
Take a dumpling wrapper and place a spoonful of the lamb mixture in the center. Moisten the edges of the wrapper with water and fold it in half, creating a half-moon shape. Pinch the edges together to seal the dumpling. Repeat with the remaining wrappers and filling.
  3. 3.
To cook the Arab-style Gyoza, you have two options:
  4. 4.
    - Pan-Frying: Heat a tablespoon of vegetable oil in a large skillet over medium heat. Add the dumplings in a single layer and cook until the bottoms are golden brown, about 2-3 minutes. Pour in 1/4 cup of water and cover the skillet with a lid. Steam the dumplings for an additional 5-6 minutes or until the filling is cooked through.
  5. 5.
    - Steaming: Place the dumplings in a steamer basket lined with parchment paper. Steam over high heat for 8-10 minutes or until the dumplings are fully cooked.
  6. 6.
Serve the Arab-style Gyoza hot with your favorite dipping sauce, such as tahini sauce or a yogurt-based sauce infused with Middle Eastern spices.

Treat your ingredients with care...

  • Ground lamb — Choose lean ground lamb for a healthier option. If unavailable, you can substitute with ground beef or chicken.
  • Fresh herbs — Ensure the parsley and mint are finely chopped to evenly distribute their flavors throughout the filling.

Tips & Tricks

  • For a crispy texture, pan-fry the dumplings until golden brown before steaming.
  • Experiment with different dipping sauces like a spicy harissa sauce or a tangy pomegranate molasses dip.
  • If you prefer a milder flavor, reduce the amount of cayenne pepper or omit it entirely.
  • Freeze any leftover uncooked dumplings on a baking sheet, then transfer them to a freezer bag for future use.
  • Serve the Arab-style Gyoza as an appetizer or alongside a fresh salad for a complete meal.
