Preparation

1.Preheat the grill to medium-high heat.

2.In a bowl, combine the ginger paste, garlic paste, turmeric powder, lemongrass, salt, and pepper. Mix well.

3.Add the chicken breasts to the marinade and coat them evenly. Let them marinate for at least 30 minutes.

4.In a small saucepan, combine the white vinegar, water, sugar, and a pinch of salt. Bring to a boil.

5.Place the julienned carrot, sliced cucumber, and sliced red onion in a heatproof bowl. Pour the hot vinegar mixture over the vegetables and let them pickle for 15 minutes.

6.In another bowl, combine the diced tomatoes, tomato paste, brown sugar, lime juice, olive oil, and a pinch of salt. Mix well to make the tomato chutney.

7.Grill the marinated chicken breasts for 6-8 minutes per side, or until cooked through. Let them rest for a few minutes, then slice them into thin strips.

8.Slice the baguettes lengthwise, leaving one side intact. Spread a generous amount of the tomato chutney on the bottom half of each baguette.
