Ingredients

The Malagasy-inspired Hoagie differs from the original American hoagie in its use of Malagasy spices and flavors. The marinade for the grilled chicken incorporates ginger, garlic, turmeric, and lemongrass, which are commonly used in Malagasy cuisine. Additionally, the tomato chutney adds a unique twist to the sandwich, infusing it with a sweet and tangy flavor profile that is characteristic of Malagasy cooking. Preparation

  1. 1.
Preheat the grill to medium-high heat.
  2. 2.
In a bowl, combine the ginger paste, garlic paste, turmeric powder, lemongrass, salt, and pepper. Mix well.
  3. 3.
Add the chicken breasts to the marinade and coat them evenly. Let them marinate for at least 30 minutes.
  4. 4.
In a small saucepan, combine the white vinegar, water, sugar, and a pinch of salt. Bring to a boil.
  5. 5.
Place the julienned carrot, sliced cucumber, and sliced red onion in a heatproof bowl. Pour the hot vinegar mixture over the vegetables and let them pickle for 15 minutes.
  6. 6.
In another bowl, combine the diced tomatoes, tomato paste, brown sugar, lime juice, olive oil, and a pinch of salt. Mix well to make the tomato chutney.
  7. 7.
Grill the marinated chicken breasts for 6-8 minutes per side, or until cooked through. Let them rest for a few minutes, then slice them into thin strips.
  8. 8.
Slice the baguettes lengthwise, leaving one side intact. Spread a generous amount of the tomato chutney on the bottom half of each baguette.
  9. 9.
Layer the sliced grilled chicken on top of the chutney, followed by the pickled vegetables. Garnish with fresh cilantro leaves.
  10. 10.

Serve the Malagasy-inspired Hoagies immediately and enjoy!

Treat your ingredients with care...

  • Lemongrass — Remove the tough outer layers before finely chopping the lemongrass stalks.
  • Tomato paste — Use a good quality tomato paste for a rich and flavorful chutney.
  • Baguettes — Choose crusty baguettes with a soft interior for the perfect texture.

Tips & Tricks

  • For a spicier kick, add a pinch of chili flakes to the chicken marinade.
  • If you prefer a milder flavor, reduce the amount of ginger and garlic in the marinade.
  • Customize the pickled vegetables by adding thinly sliced bell peppers or radishes.
  • Substitute the chicken with grilled tofu or shrimp for a vegetarian or pescatarian version.
  • Serve the hoagies with a side of spicy Malagasy tomato salsa for an extra burst of flavor.
