In this Puerto Rican adaptation of Husmannsgryte, we incorporate the vibrant flavors of Puerto Rican cuisine. The original Norwegian recipe is traditionally made with beef, onions, carrots, and potatoes, simmered in a creamy sauce. In the Puerto Rican version, we replace the carrots and potatoes with bell peppers and plantains for a tropical twist. Preparation

1.Heat olive oil in a large pot over medium heat.

2.Add the beef cubes and brown them on all sides. Remove from the pot and set aside.

3.In the same pot, sauté the onions, bell peppers, and garlic until they are softened and fragrant.

4.Return the beef to the pot and add the diced tomatoes, beef broth, pineapple juice, chili pepper, cumin, paprika, oregano, salt, and pepper.

5.Stir well to combine all the ingredients. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1 hour, or until the beef is tender.

6.Add the sliced plantains to the pot and continue simmering for an additional 15 minutes, until the plantains are cooked through.

7.Adjust the seasoning if needed.

8.Serve the Puerto Rican Husmannsgryte hot with rice.
