Preparation
-
1.In a large mixing bowl, combine the all-purpose flour and salt. Add the chilled butter cubes and use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs.
-
2.Gradually add the ice water, a little at a time, and mix until the dough comes together. Shape the dough into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
-
3.In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, lemongrass, and grated ginger. Sauté until the onions are translucent and fragrant.
-
4.Add the ground turmeric and chili powder to the skillet and cook for an additional minute.
-
5.Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Season with salt and pepper to taste. Remove from heat and let the filling cool.
-
6.Preheat the oven to 200°C (400°F).
-
7.On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch. Cut out circles using a round cookie cutter or a glass.
-
8.Place a spoonful of the cooled beef filling onto one half of each dough circle. Fold the other half over the filling to create a half-moon shape. Press the edges together to seal the patty.
-
9.Place the patties on a baking sheet lined with parchment paper. Brush the tops with a beaten egg for a golden finish.
-
10.Bake in the preheated oven for 20-25 minutes, or until the patties are golden brown and crispy.
-
11.Serve hot and enjoy the flavorful Sabahan Spiced Beef Patties.
Treat your ingredients with care...
- Lemongrass — Remove the tough outer layers before finely chopping the tender inner part for a more pleasant texture in the filling.
- Ground turmeric — Be cautious as turmeric can stain surfaces and clothing easily. Use a cutting board and utensils that are easy to clean or won't stain.
- Chilled butter — It's important to keep the butter cold to achieve a flaky crust. If the butter starts to soften while working with the dough, refrigerate it for a few minutes before continuing.
Tips & Tricks
- For a spicier kick, add a finely chopped chili pepper to the filling mixture.
- Experiment with different ground meats such as chicken or lamb for alternative flavors.
- Serve the Sabahan Spiced Beef Patties with a side of spicy tomato chutney for an extra burst of flavor.
- If you prefer a milder taste, reduce the amount of chili powder in the filling.
- Make a larger batch of patties and freeze the uncooked ones for future quick and delicious meals.
