Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

2.In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

3.Add the diced tomatoes and cook until they start to soften.

4.Return the beef to the pot and add the sliced plantains, beef broth, peanut butter, ground coriander, ground ginger, and paprika. Stir well to combine.

5.Season with salt and pepper to taste. Bring the stew to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the beef is tender and the flavors have melded together.
