Treat your ingredients with care...
- Plantains — Use ripe plantains for this recipe as they provide a sweeter flavor and softer texture when mashed.
- Ground cayenne pepper — Adjust the amount of cayenne pepper according to your spice preference. Add more for a spicier kick or reduce for a milder taste.
- Vegetable broth — If you prefer a richer sauce, you can use vegetable stock instead of broth.
Tips & Tricks
- For extra crispiness, you can coat the fritters in breadcrumbs before frying.
- Serve the Kpekpele with a side of fresh sliced tomatoes and onions for added freshness.
- If you prefer a smoother sauce, you can blend the spicy peanut sauce ingredients together before cooking.
- Adjust the spiciness of the sauce by adding more or less cayenne pepper.
- Leftover Kpekpele can be reheated in the oven for a few minutes to regain their crispiness.
