Treat your ingredients with care...

  • Plantains — Choose ripe plantains with yellow skin for a sweeter flavor. If you can't find plantains, you can substitute with ripe bananas, although the taste will be slightly different.

Tips & Tricks

  • For a spicier version, increase the amount of chili powder or add a chopped chili pepper.
  • Feel free to add other vegetables of your choice, such as zucchini or eggplant, to make the stew even more nutritious and flavorful.
  • If you prefer a thicker stew, you can mash some of the cooked plantains and vegetables with a fork before serving.
