1.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.

2.Add the curry powder, smoked paprika, turmeric, and cayenne pepper to the pot. Stir well to coat the onions and garlic with the spices.

3.Pour in the chicken broth and coconut milk. Stir in the brown sugar and fish sauce. Bring the mixture to a simmer and let it cook for 10 minutes to allow the flavors to meld together.

4.Add the shredded chicken, shrimp, okra, bell peppers, and collard greens to the pot. Cook for an additional 5-7 minutes, or until the shrimp is cooked through and the vegetables are tender.

5.Divide the cooked rice noodles among serving bowls. Ladle the hot broth and ingredients over the noodles.
