Preparation

  1. 1.
In a bowl, marinate the beef cubes with fish sauce, soy sauce, minced garlic, and black peppercorns. Let it sit for at least 30 minutes.
  2. 2.
In a large pot, heat vegetable oil over medium heat. Sauté the onions, ginger, and garlic until fragrant.
  3. 3.
Add the marinated beef cubes and cook until browned on all sides.
  4. 4.
Pour in the beef broth and add bay leaves. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours or until the beef is tender.
  5. 5.
Add the potatoes and carrots to the pot and continue simmering for another 10 minutes or until the vegetables are cooked.
  6. 6.
Finally, add the cabbage and cook for an additional 5 minutes until wilted.
  7. 7.
Season with salt and brown sugar to taste.
  8. 8.
Serve hot, garnished with fresh cilantro. Enjoy with steamed rice.

Treat your ingredients with care...

  • Beef — Marinating the beef helps to tenderize it and infuse it with flavor. Ensure that the beef is cut into uniform cubes for even cooking.
  • Ginger — Use fresh ginger for its aromatic and slightly spicy flavor. Slice it thinly to release its essence into the stew.
  • Cabbage — Chop the cabbage into bite-sized pieces to ensure it cooks evenly and retains its texture.

Tips & Tricks

  • For a richer flavor, you can add a small amount of beef bone marrow to the stew while simmering.
  • If you prefer a thicker broth, you can dissolve cornstarch in water and add it to the stew during the last few minutes of cooking.
  • Lauya tastes even better the next day as the flavors have had time to meld together. Consider making it in advance and reheating it for a quick and delicious meal.

Serving advice

Serve Lauya hot in individual bowls, garnished with fresh cilantro. Accompany it with steamed rice to soak up the flavorful broth.

Presentation advice

To enhance the presentation, arrange the beef cubes, vegetables, and broth in an appealing manner in each bowl. Sprinkle some fresh cilantro on top for a pop of color.
