Preparation

1.In a large pot, heat some olive oil over medium heat. Add the onions, carrots, celery, and garlic. Sauté until the vegetables are softened.

2.Add the beef chunks to the pot and brown them on all sides.

3.Pour in the red wine and let it simmer for a few minutes to cook off the alcohol.

4.Add the bay leaves, rosemary, thyme, cinnamon stick, beef broth, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 2 hours or until the beef is tender.

5.While the stew is simmering, prepare the Pearà sauce. In a bowl, soak the bread slices in milk until softened.

6.In a blender or food processor, combine the soaked bread, grated Parmesan cheese, black pepper, and salt. Blend until smooth and creamy. Set aside.

7.If preparing the roasted vegetables, preheat the oven to 200°C (400°F). Toss the sliced bell peppers, zucchinis, and eggplant with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20 minutes or until tender and slightly charred.

8.Once the beef stew is ready, remove the bay leaves, rosemary, thyme, and cinnamon stick. Serve the stew with a generous drizzle of Pearà sauce and a side of polenta. Add the roasted vegetables, if desired.
