1.Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

2.Season the beef chuck roast with salt and pepper, then sear it on all sides until browned. Remove the beef from the pot and set aside.

3.In the same pot, add the diced onion, bell pepper, celery, and minced garlic. Sauté until the vegetables are softened and fragrant.

4.Stir in the paprika, cayenne pepper, dried thyme, and bay leaves. Cook for an additional minute to toast the spices.

5.Return the seared beef to the pot and pour in the beef broth. Bring to a boil, then reduce the heat to low and cover the pot. Simmer for 2-3 hours, or until the beef is tender and easily shreds with a fork.

6.While the beef is simmering, prepare the spicy rice. In a separate pot, combine the long-grain rice, chicken broth, hot sauce, Worcestershire sauce, dried oregano, dried parsley, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and fluffy.

7.Once the beef is tender, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and simmer for an additional 10 minutes to allow the flavors to meld together.
