Preparation

1.In a large mixing bowl, combine the flour and salt. Add the cold butter and use your fingers to rub it into the flour until the mixture resembles coarse crumbs.

2.Gradually add the cold water, mixing until the dough comes together. Knead the dough lightly until smooth, then cover it with plastic wrap and refrigerate for 30 minutes.

3.In a skillet, heat a small amount of vegetable oil over medium heat. Add the onion, garlic, ginger, lemongrass, and chili pepper. Sauté until fragrant.

4.Add the shrimp and fish to the skillet and cook until they are opaque and cooked through. Season with salt and pepper to taste.

5.Pour in the coconut milk and simmer for a few minutes until the flavors meld together. Remove from heat and let the filling cool.

6.Preheat vegetable oil in a deep fryer or large pot to 180°C (350°F).

7.On a lightly floured surface, roll out the dough to a thickness of about 1/8 inch. Cut out circles using a round cookie cutter or a glass.

8.Place a spoonful of the seafood filling onto one half of each dough circle. Fold the other half over the filling and press the edges together to seal.

9.Fry the lörtsy in the preheated oil until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
