1.Mash the boiled potatoes until smooth and set aside.

2.In a bowl, combine the minced pork, Shaoxing wine, soy sauce, oyster sauce, minced ginger, minced garlic, Sichuan peppercorns, dried chili flakes, and salt. Mix well.

3.Take a small portion of the mashed potatoes and flatten it in your palm. Place a spoonful of the pork mixture in the center and fold the potato dough over to form a crescent shape. Repeat with the remaining ingredients.

4.Heat the vegetable oil in a pan over medium heat. Add the dumplings and cook until golden brown on both sides.
