In this Puerto Rican adaptation, the leeks take center stage as the main ingredient in a flavorful stew. 1.In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.

2.Add the sliced leeks and diced red bell pepper to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.

3.Stir in the ground cumin, paprika, dried oregano, ground turmeric, and bay leaf. Cook for another minute to toast the spices and release their flavors.

4.Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for 20-25 minutes, or until the leeks are tender.

5.Season with salt and pepper to taste. Remove the bay leaf.

6.Serve the Leek Stew hot, garnished with fresh cilantro or parsley.
