Preparation

1.In a large pan, heat the olive oil and butter over medium heat.

2.Add the chopped onion and minced garlic, sauté until translucent.

3.Add the Arborio rice to the pan and stir well to coat the grains with the oil and butter mixture.

4.Pour in the white wine and cook until it evaporates.

5.Gradually add the fish or vegetable broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more.

6.After about 15 minutes, add the mixed seafood to the pan and continue cooking until the rice is al dente and the seafood is cooked through.

7.Stir in the lemon zest and juice, and season with salt and pepper to taste.
