Preparation

1.In a large pot, add the beef bones, onion, garlic, carrot, celery, bay leaf, paprika, rosemary, thyme, and cinnamon stick.

2.Pour in the beef broth and bring to a boil. Reduce heat and simmer for 1 hour, skimming off any impurities that rise to the surface.

3.Remove the beef bones and strain the broth into a clean pot. Discard the solids.

4.Bring the broth back to a simmer and add the sliced beef sirloin. Cook for 2-3 minutes until the beef is cooked to your desired doneness.

5.In a separate pot, cook the homemade pasta according to package instructions. Drain and set aside.

6.Season the broth with salt and pepper to taste.

7.To serve, divide the cooked pasta among serving bowls. Ladle the hot broth and beef over the pasta.
